Gene’s Beans

…it should be called Alison’s Beans, but I couldn’t help myself with the alliteration. Since everyone keeps asking for the recipe for Vegetarian Chimichangas, this seemed the appropriate place to post this recipe.

Vegetarian Chimichangas

2 c cole slaw mix (bagged)

1 c cheese

1 can black beans (14 oz)

1 c salsa

10-12 tortillas

Sour cream

Preheat the oven to 350°. Rinse the black bean in a colander. Mix all ingredients together in a bowl (except the tortillas). Place roughly a palm-sized quantity in the middle of the tortilla. First, fold the bottom in, then the sides. Place on a baking sheet, seam side down. Bake 15 minutes at 350°.  Serve topped with a little bit of sour cream.
