Spaghetti Marco Polo

Adapted from Julia Child’s appearance on Mr. Rogers TV Show in the 

In a large bowl combine:

1 6 oz. can chunk white or light tuna (drained)
1 4 oz. jar chopped pimientos (drained)
1 4 oz. can sliced black olives  (drained)
1 bunch parsley – chopped (Italian parsley, if available)
4 green onions – chopped
¼ cup, or so, chopped walnuts or roasted pine nuts 
¼ - ½ teaspoon cracked black pepper (we like more pepper rather than less)
½ teaspoon salt

Cook your favorite pound of spaghetti to package directions. Drain. Add 1 TBSP olive oil and toss into the bowl – alternating with Swiss cheese and Parmesan as you toss – so that the cheese doesn’t melt in large balls.

6 oz. Swiss cheese – shredded
¼ cup shredded Parmesan cheese

Serves 4. Add more pepper and parmesan to taste.</description>
