They say your two happiest days as a med student are the day you graduate and your initial experience as a “physician in training”……..the White Coat Ceremony. So, on August 6, 2006 I walked across the stage on the health sciences campus and gladly accepted my coat without tripping or looking to goofy. Then, I sat patiently and listened to the various speakers iterate how hard the next four years of my life will be. Nevertheless, a good time was had by all. And, believe it or not on Monday, as I take my first class, know now that you guys can ask me all kinds of medical related questions that I will not yet know the answer to. Although, I’ll do my best to explain why your elbow hurts or why your left foot is longer than your right and if that’s a “bad” thing.

Friday, July 28th, 2006…… Scott Jones, Elizabeth Leasure, and myself descended upon San Francisco to take part in 26.2 miles of physical pain and beautiful scenery. It’s a love, hate relationship this running thing. However, if there is one city that can make the last six miles of marathoning a fond memory, San Fran is the one. The temperature was a perfect 63 degrees Fahrenheit and the Cytomax was lukewarm and fresh from the plastic bottle. Scott and I cruised through the first twenty miles, racing cars across the golden gate and intimidating the sea lions along the fisherman’s wharf. Unfortunately, the last six miles included an incline other than “flat” and “downhill.” However, this did not deter us. My time you ask? Well, that would be a number as close to the four hour mark without going over…that’s right, I finished the race in 3:59:59. Check out the pics and assorted SFM paraphernalia.

Pour the batter into a greased and floured 8-inch square pan and bake for 45-55 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it’s done, remove to a rack to cool. Resist the temptation to cut into it until it’s mostly cool.

That way they actually “fit” and you don’t have a nice sploched black porch….like mine. Regardless, this is the final look, minus a few decorations.

Vegetarian Chimichangas

2 c cole slaw mix (bagged)

1 c cheese

1 can black beans (14 oz)

1 c salsa

10-12 tortillas

Sour cream

Preheat the oven to 350°. Rinse the black bean in a colander. Mix all ingredients together in a bowl (except the tortillas). Place roughly a palm-sized quantity in the middle of the tortilla. First, fold the bottom in, then the sides. Place on a baking sheet, seam side down. Bake 15 minutes at 350°. Serve topped with a little bit of sour cream.
